COOKING DELICIOUS KONDRÉ
Kondré is a common meal of the Western region of Cameroon. It is simple, economical, nutritious and easy to cook plantain meal.
It is usually consumed during traditional occasions like weddings, family dinners, funerals and what have you. Having this on your table during weekends will give a broader smile to your house hold.
INGREDIENTS
– 4 tablespoons palm oil (red oil)
–10 green plantain bananas (unripe)
– 800g of beef or the tail of a cow
-250g or 5 fresh tomatoes
–1 stalk of celery with leaves
–1 leek
–2 red ‘aromatic’ hot pepper
–1 bunch of parsley
–1 onion
4 sheets of ginger
–4 cloves of garlic
-1teaspoon of black pepper in grains
–1 teaspoon white pepper
–4 cubes Maggi
–Salt and pepper
PROCEDURE
Slice spices (leek, celery, parsley, pepper and onion) or chop them.
–Peel plantains and cut each into 3.
–In a casserole, put the oil to heat then add chopped onion.
–Wash the meat in vinegar and cut into pieces.
Before putting the onion, add the meat, salt lightly and steamfor about 5 minutes so that becomes golden brown.
–At the end of 5 min, put the meat on a plate.
–Put the plantains in a pot. –Salt lightly and add 2 cubes of maggi. Stir well. Put water, cover and cook for 15 minutes.
–At the end of 15 minutes, add meat, garlic, pepper, condiments, 2 remaining cubes, and spices. Cover and simmer over low heat for 45 min.Taste while cooking to see salt and pepper are ok
–At the end of 45 minutes, take the pot off the fire and let it stand for 10 minutes covered before serving.
–Everyone can add a few drops of aroma Maggi on his/her plate.
